
Recertification of the NSW FSS applies to supervisors and managers of food businesses in NSW who wish to renew their certificate prior to or just after (90 days) the statutory 5-year expiration of their previously issued certificate.
The NSW Food Authority's FSS program was established to help reduce foodborne illness in the hospitality and retail food service sectors in NSW by improving food handler skills and knowledge.
The program also aims to provide food businesses with high quality and consistent training by a Registered Training Organisation (RTO) that has been approved by the Food Authority such as Job Trainer Australia

This course is for people who have already held the NSW FSS and which is due to expire or has expired in the immediate preceding 90 days.
Before commencing this short course, you will need to upload evidence of the following certificates;
✔ SITXFSA005 - Use hygiene practices for food safety
✔ SITXFSA006 - Participate in safe food handling practices
✔ NSW FSS Certificate (previous certificate) due to expire or expired within the immediate preceding 90 (ninety) days
You may already have completed this course with another provider, simply upload evidence of your certificates.
If you do not have the required evidence then you will need to select the full SITXFSA006 unit for NSW
Food businesses that have an appointed FSS whose FSS certificate is due to expire or has expired ( in the immediate preceding 90 days) will need to enrol their FSS in recertification training with Job Trainer Australia, who are approved by the NSW Food Authority to deliver the FSS program.
A Food Safety Supervisor is a person who:
✔ is trained to recognise and prevent risks associated with food handling in a retail food business.
✔ holds a current FSS certificate (no more than five years old),
✔ is not an FSS for any other food premises or mobile catering business, and
✔ can train and supervise other people in the business about safe food handling practices.
Business must appoint at least one trained FSS per premises;
✔ Ensure they hold the FSS certificate; and
✔ It is a legal requirement that all businesses keep a copy of their FSS certificate on the premises and produce it for inspection on request by an authorised officer.
✔ The Food Authority encourages businesses to display their FSS certificate
Under certain circumstances, Job Trainer Australia can take into account the applicant’s prior learning, while still providing training in the authorities key focus areas.
NSW Food Authority require a refresher of this unit every 5 years.

ASSESSMENT PROCESS

THE DETAIL
There are four (4) main focus areas of the NSW FSS Re-certification program, these are;
✔ Safe egg handling
✔ Allergen management
✔ Cleaning and sanitising
✔ NSW Food Act 2003 Offences *( No assessment required)
This course is for people who have already held the NSW FSS and which is due to expire or has expired in the immediate preceding 90 days.

✔ NSW FSS certificate ( due to expire or expired) and
✔ SITXFSA006 and
✔ SITXFSA005 ( or equivalent) statement of attainment/s
If you do not have the required evidence then you will need to select the full SITXFSA006 unit for NSW
This course is delivered online with an offline practical skills demonstration. Please read the assessment tab carefully for more information.
Each student will undertake a Pre-Enrolment Review or LLND short test before enrolling to help confirm the proposed course is suitable. It will provide valuable information about an individual's existing skills and knowledge, language, literacy and numeracy skills and whether the course will help in achieving learning and/or employment goals.
Upon successful satisfactory completion of all assessment stages you will be deemed competent and awarded a statement of attainment which can be used towards a nationally recognised training course or qualification.
Assessment stage 1 - Knowledge - Multiple Choice and Case Studies.
After completion of each of the modules you will be presented with two assessments:
✩ Multiple-choice assessment
✩ Case Study assessment
✩ Each module assessment comprises of a combination of multiple-choice questions such as drag and drop, fill in the missing word. You will also be asked to read a number of case studies and answer questions relating to each.
✩ Should you submit an incorrect response to a multiple-choice question, you will be provided with a further opportunity to review the learning material and reattempt the question/s.
Once you have satisfactorily completed Assessment 1 – your answers will be assessed to determine competency.
Assessment stage 2 - Video Verification
✩ this comprises of learner authenticating themselves with an authorised photographic ID
FEEDBACK AND COMPLETION
✔ Please allow two (2) working days for assessment.
✔ You will be provided with 3 attempts for each assessment question, if you exceed 3 attempts you will be offered feedback. You will be required to review the learning again to reattempt the question.
✔ Feedback from your assessor for the free text questions and video verification will be provided through the learner portal. You will be required to review the feedback and modify your response before resubmitting.
✔ Please note - Your work will only be assessed by a JTA assessor upon your submission of your video.
✔ Competency Conversation - if a trainer and assessor needs to clarify any aspect of your submission, they will contact you to discuss.
Once an assessor deemed you as competent for this unit, you will be issued with a Statement of Attainment.
Food service, caterer and related retail businesses in Australia need to meet new food safety requirements in the Australia New Zealand Food Standards Code (the Code) from 8 December 2023.
Standard 3.2.2A is a new food safety standard for these types of businesses that aims to improve food safety and support consumer confidence.
There are three food safety management tools in the new standard:
1/ food safety supervisor (FSS) -Offered by Job Trainer Australia SITXFSA006
2/ food handler training - Offered by Job Trainer Australia SITXFSA005
3/ substantiation of critical food safety controls (evidence tool)
Some businesses already require an FSS. The change means that these businesses will also require food handler training (for all food handlers) and if they conduct higher risk activities, the evidence tool as well.
For other businesses, the FSS requirement will be new. The new standard extends the FSS requirement to most food service, caterer and related retail businesses that are currently exempted by NSW food safety laws. These businesses will require FSS and food handler training, and if they conduct higher-risk activities, the evidence tool also. Key examples are school canteens, delicatessens and institutional settings such as gaols.
** In NSW, Food Authority licensed businesses that do not conduct retail sale of food and one-off not for profit events will be exempt from the new requirements.
